Full disclosure on RunColo, I didn't pay a dime for these sheets as they were sent to me in exchange for a product review. I also don't consider myself an information maven when it comes to bed sheets, I know the term thread count but that's about it, but I do know comfort.

SHEEX was founded by Susan Walvius and Michelle Marciniak, two ladies who coached women's basketball at the University of South Carolina. I always love a good story about entrepreneurial endeavers, so apparently these two women took the idea of moisture wicking fabrics and applied that knowledge into making bed sheets.
According to their website, traditional bed sheets trap heat and can disrput sleep. SHEEX performance sheets breathe better and allow the body to do its job naturally.
After using SHEEX bed sheets for a few months, I can't say that I saw any improvement in my 5K time, but they are easily the most comfortable bed sheets that I have slept on. The downside is the cost, SHEEX bed sheets are a premium product, but considering you spend 1/3 of your day sleeping, I think you'll find the ROI in positive territory.
The sheets are 87% Microfiber Polyester and 18% Spandex, thus they have a nice stretch to them.
SHEEX performance sheets are sold at Bed Bath and Beyond and are made in the goold old US of A. Check out the reviews on the Bed Bath and Beyond, 4.3/5 rating, pretty solid. Reading those reviews the sheets also got high marks from people who sweat a lot and women having hot flashes. I can't say that I fall into either of those camps, but I can vouch that they are comfortable, they fit well and the quality is top notch.
